Ethnic dishes, from countries not strictly related to the production or consumption of wine, often offer very interesting insights to the pairing with it. Every country has its own culinary traditions. There are cuisines where there is extensive use of spices: curry, turmeric, cinnamon, cardamom, paprika. Aromatic or semi-aromatic white wines are perfect with these dishes. If, on the other hand, you want to experiment with spicy dishes and don't know what to pair with the Habanero or Jalapeno chilies you have in your pantry, then choose a smooth wine, even one with a significant alcohol content.
