Malvasia Cotar 2020
Maceration on the skins for 7 days in open vats, manual pressing with a wooden press and start of alcoholic fermentation with natural yeasts in open wooden vats; malolactic fermentation in 20 hl oak barrels. Aging on the fine lees with battonage for 18 months in the same containers. No clarification and filtration.
Cotar
The vineyards and the cellar of the Cotar company are located to the west of the Karst region, in the village of Gorjansko, about 5 km from the sea. Although the family had a vineyard tradition, the farm was born out of nowhere. Approximately 30 years ago, the first wines were produced for consumption at the owner's hut, teran (terrano) and white karso (karko belo).
Noting that the two works were too tiring, the Cotar family chose the vineyard and decided to keep the inns exclusively for lunches on reservation. The first productions were bottled in 1990 (1988). The care of the vineyards and the cellar passes into the hands of the next generation, Branko and Vasja, but wine is always produced in the same way as it was done by their grandparents. Today the winery has expanded considerably, the underground tunnel is sacral where the barrels are stored for the maturation of the wine. A natural environment excavated in the rock, where yeasts flourish in the air and constitute a unique heritage for the Cotar family. To this you have to combine the energy of the vintners and the whole family to achieve the wonderful result we know in every single bottle.
