It is located in northern Martinique, at the foot of Mount Pelée. In 1914 Gustave Crassous de Médeuil took over the distillery that is still governed by his heirs. Sugar cane grows on volcanic soils battered by sea breezes. Within an hour of harvesting it is processed to extract its juice in the agricultural style. The distillation is entrusted to two copper stills to preserve the floral and fruity aromas of which the raw material is rich. The water is very pure and comes from the bowels of the volcano, key to having a very high quality distillate. Aging takes place in oak barrels, which are roasted inside and then partially scraped to better dose the tannins of the wood.
