The grapes come from three parcels located in the classical area of Castelli di Jesi in the Municipalities of Cupramontana, Staffolo and San Paolo di Jesi. The vineyard is conducted according to the guyot system, with a yield per hectare of about 80 quintals (about 55 Hl.). The cultivation according to a rigid biological method enhances the characteristics of the individual parcels which are then assembled in the cuveè after fermentation. Fermentation takes place in steel at a controlled temperature without inoculation of selected yeasts. The wine stops on the fine lees for five to six months before bottling. The wine is made from Verdicchio grapes integrated according to the vintage by a small presence of Trebbiano and Malvasia, according to the ancient tradition. The grapes are harvested in crates early in the morning, to preserve their freshness. They give a dry white wine to the palate, with pleasant acidity and delicate aromas of sour apple, white flowers and herbs. Delicate citrus scents are offered in the best and freshest vintages. With the evolution in the bottle tends to acquire softness and pleasant honeyed and almond tones. It is a wine that expresses itself best after one or two years from the harvest. It should be served fresh, especially as an aperitif. It is an ideal wine for every kind of appetizer and for fish in all its processing, especially with crustaceans, but is able to hold even tastier dishes.

La Distesa
La Distesa comes from the desire to produce wines that respect the territory and the vines. Wines that are not approved to the dominant international taste that requires a built ease and a pleasantness. "To be winemakers for us means first of all telling the territory, with its thousand complexities, and following the seasons, with their always different evolutions. This is why we have chosen a method of organic cultivation, so as to express without distortion what the earth brings with it, naturally. Being winemakers means then directly following the whole production process, from the land to the consumer. For years we have been working in the vineyards trying to safeguard and let biodiversity be expressed as much as possible, sowing favino, vetch, pea, alfalfa and letting the spontaneous essences prosper. We do not fertilize, we treat only with sulfur and small doses of copper.
Once or twice a year we spray the biodynamic preparation 500 (cornoletame). The low yields per vine, the careful selection of the grapes during harvesting - performed manually, in small crates - the spontaneous fermentation with indigenous yeasts, the low levels of sulfur dioxide, the careful refinements are fundamental parts of our work."
In the winery located in the sunny district of San Michele di Cupramontana, the city of Verdicchio, the grapes are vinified to obtain a limited production of bottles for high catering, wine bars, wine shop.
