Made with only Savagnin grapes, the Chateau Chalon of Domaine Jean Macle is undoubtedly the representative par excellence of this tiny appellation. Obtained from 40-year-old plants, which grow on blue marls in an area that was not considered for the production of wine until the mid-1950s, this Jaune di Jura vin is elaborated starting from a vinification in concrete tanks where it rests. for 6 years on "voile" or with full barrel. Thus a film is formed on the surface, the flor, which will give the wine unique characteristics and an aptitude for aging without limits.

Three Senses
The taste of Jean Macle's vin jaune is one of rare subtlety, a combination of power and finesse, of aromas on the nutty but never dominant side, associated with curry, saffron, toasted almond, green apple, with peacock tails declining throughout the spicy range. The sensation of cleanliness is total, almost as if facing a dry sherry. A wine to wait a long time to perceive its full greatness.PairingsNo pairing for this mythical wine other than a cheese, nuts and grape bread.

Domaine Macle

The Domaine Macle was born in 1850. The choice and desire to plant vineyards on land where no one, at a certain time, wanted to venture indicates the determination and passion of this family of vignerons, who have become one with the vineyards of Château-Chalon . The vineyards are located on a territory with a unique matrix, where blue marls emerge, in a slope that reaches up to 50%. Laurent Macle with his wife and sister, today carry on the domaine that was brought to the top of viticulture by his father Jean. The tradition of elaborating wines with flor and making only a soft note perceptible, has allowed the Chateau Chalon in particular to become part of the wine excellences of France, to become an institutional wine. At Chateau Chalon you can breathe a medieval air and the Macle family's ability to slow down the pace of time makes this place symphonic.
