Salmariano is a "Verdicchio dei Castelli di Jesi Classico Riserva", coming from a late harvesting, usally half of october, done by hand in small crates using dry ice to prevent oxidation. The whole bunches are brought to the winery and softly pressed, than the must stay few hours in contact with the skin and femented in stainless steel at 15°, with permanence on his lees untill bottling. Agening is done by 12 months in stainless steel tanks and the 20% of the total amount aged for the same amount of time in small oak barrels.
The Marotti Campi company is located on the hill of Sant'Amico, just outside the historic center of Morro d'Alba, in a beautiful nineteenth century manor house. The company consists of about 120 hectares of which 52 are planted with vines. About 44 hectares are cultivated with native vines, Lacrima and Verdicchio, There are also international vines such as Petit Verdot and Cabernet Sauvignon, in addition to Montpulciano. The nearby cellar is a modern structure built in 1999 in the industrial area of Sant'Amico.
