The young Paul-Henry Pellé, with his work, is the most authoritative standard-bearer of the small Menetou-Salon appellation, with extensions in the noblest neighborhood (Sancerre and Pouilly-Fumé). Ideas, sensitivity and great respect for family tradition are the guiding features of this producer, with few frills and a lot of work. Fathers have been listening to the family for four generations. He began Paul Pellé in the early 1900s, then his son Ernest, then Henry, who in the 70s gave the Domaine a decisive impulse, with a qualitative vision of wine: today, in fact, it is up to Paul-Henry to collect an inheritance made his own and enriched with stimulating and dynamic cues. Morongues is an assemblage of 7 different plots among the highest areas of the Menetou-Salon denomination. Marly soils, colder climate than the valley bottom, greater temperature excursions but also more sunshine than the grapes, offer more subtle and less concentrated aromas of white flowers and citrus fruits.
