Emidio Pepe is the only one to have over 20 vintages of Montepulciano d'Abruzzo in the cellar from 1964 to 2008. After the rasping, the red grapes ferment healthy in small cement barrels for about 10/15 days. At the end of fermentation, the drawing off takes place, ie the separation of the skins from the wine; this phase involves the passage of these peels in the wooden press. The Montepulciano d'Abruzzo remains to mature in cask for about two years before being bottled by hand. After bottling it is left to rest for 10-20 years in the aging cellar in a basement of 600 square meters at a constant temperature in a cool and humid environment until the time of sale All the bottles before being put on sale are carefully controlled and selected, decanted and decanted by hand without any filtration and pasteurization. For this reason Emidio Pepe guarantees its bottles for 20 years ensuring quality and genuineness and over 200,000 bottles of aged.
Ruby-garnet color, rather dark. Austere nose where hints of humus, sandalwood and cut grass combine. In the mouth it is dry, firm, overbearing in its impact with a very long finish.
