Taurasi Perillo 2012
Taurasi by Michele Perillo benefits from a tufaceous soil at almost 600 meters above sea level and old vines, 35 years for the young plant and 85 for the old radial vineyard. Most of the plants are still at the bottom. The pedoclimatic conditions make a conventional but minimally invasive agriculture possible for the land.
A cold prefermentative maturation is followed by 20-30 days of maceration on indigenous stainless yeasts. 12 months aging in 225 liter oak barrels and 12 months in 20 hl barrels. After bottling the wines rest 8 years in the cellar before being put on the market and only when they are considered truly ready.
