From grapes 30% Corvina, 30% Corvinone, 30% Rondinella, 10% Rossignola, Oseleta, Negrara, Dindarella of the hills of Mezzane and Tregnano. The different origins contribute to create a balanced wine with a good structure, combining the characteristics that the individual areas of Valpolicella are able to express. The grapes are grown in Guyot and pruned to 12 buds per plant, with a production of 8,000 kg per hectare. 20 years the average age of the various parcels. After harvesting, the grapes undergo a drying with humidity and temperature controlled for about 4 months in the company's fruit cellar. A soft crushing followed by an alcoholic fermentation with maceration for the following 40/60 days at 15 ° C. After an aging of 3 years in Slavonian oak barrels, Amarone della Valpolicella di Tedeschi refines a further 6 months in bottle.
This wine is made from grapes harvested from various vineyards located in the hills of Valpolcella Classica. The different origin of the different grape varieties is important in order to obtain well-balanced wines with good structure that only a few individual areas of the Classica zone can give. The grapes are harvested at the end of September/beginning of October by hand and are placed in plastic plateaux for drying, which takes place in fruit lofts at controlled temperature and humidity. At the end of the drying process (after about 4 months) it is important to have grapes in good health. During the month of January, the grapes are crushed using a roller crusher that allows for a soft pressing. Fermentation takes place in steel winemakers at a temperature of 15° C. with a slow 40-day maceration. At the end, the wine is placed in Slavonian oak barrels, where it rests for two to three years. It is then bottled and stored in bottles for six months before being sold
