Catarratto Bosco Falconeria 2021
From Catarratto extra-lucid cultivated in biological conditions at 250m above sea level, in the district of Bosco Falconeria in Partinico. The vines of an average age of 16 years with a plant of espalier and alcamese sapling in the dry are treated only with sulphurated products and green manure of spontaneous vegetation. After a manual harvest, usually in September, in the cellar it undergoes a soft membrane pressing and a spontaneous fermentation in stainless steel at controlled temperature is allowed to take place.
