Maison Ferrand, the historic French Cognac producer, has always had relationships in the Caribbean as a retailer of barrels for aging rum. The decision to start with its own line takes place with the progressive discovery of some barrels of particular vintages, used to dare the style of industrial blending or for the internal consumption of the distillery. Noting the variety and refinement of these rums the decision to bottle was completely natural. Collection The Plantation was born. For the aging it was decided to use a very common technique in the 18th and 19th centuries and now almost disappeared: the 'double aging'. The spirits age for years in the warm Caribbean climate, in ex bourbon barrels. Once they have reached the right maturation they are sent pure to the Maison, at the Château de Bonbonnet, where the refinement continues in small French oak barrels to acquire elegance, refinement and roundness. In Plantation's Old Reserve family, Trinidad is the English-style version with a good sweetness accompanied by hints of spice.
Hazelnut, citrus, cinnamon and vanilla held together by a light note of smoke. Present right from the start they accompany the taste evolution on the palate. Good body and softness balanced. The finish takes us to hazelnut and leather, cooked molasses and candied orange.
