The vinification of this wine takes place in full classic Jura style. Soft pressing of the grapes, static settling, fermentation of the clean grapes and aging in used barriques and kept plagues for two years and six months to allow a slight oxidation. The vineyards have an average age of 65 and have been planted on blue marl. Refinement of 4 years of which 3 years on the voile of the most qualitative indigenous yeasts.

Three Senses
The characteristics of Vin de Voile are decisive for those tasting this type the first time, and one should never mention the wine before at least finishing the bottle. As surprising as they are adverse, these wines are reminiscent of musk, underbrush, cooked apple, vegetable stock, and the smell of mushrooms. The inevitable volatile acidity stings immediately, but it is also the element that relaxes the mouth and especially the stomach at the end of the bottle. It seems to vibrate with the acidity. And such prolonged contact with oxygen transforms it into the real food of the wine.

Domaine Labet was born in 1974 by the passion and the foresight of Josie and Alain Labet. The current leadership is in the safe hands of Julien, Romain and Charline, young people with a great vision  that can be seen in this industry of creativity and tradition. The company is located on the south of the Jura region, in the area called Revermont. The company initially consisted of 2.5 ha. Today it is spread on 15 ha in which the soil is characterized by red, white, blue and yellow marne layers. The company have slowly been converted into organic, allowing the next generation to naturally handle over seventy years old vineyards. The grapes used are mainly Chardonnay and Savagnin, which are able to express unique typologies. In the cellar they work by following two visions, the most traditional one (the first) producing voile wines, which means that during the aging period the barrel is not filled, thus facilitating the formation of a veal of yeasts, giving the wine typical oxidative sensations of the area. The second approach was realized for the first time by Alain Labet, who can be considered the pioneer of the "ouilles" style, that is, wines produced through aging the wine through full barrels, typical of neighboring Burgundy, thus revealing the great potential Of the white wines of the Jura. Today, this life-loving, sensitive and cheerful company, always willing to open some bottles to taste, is a very important reference for Jura's traditional whites.
