The Rosso Arcaico is a wine obtained by maceration on skins for 20 days and spontaneous fermentation with only indigenous yeast in terracotta amphora without the use of chemical additives and oenological agents, with the exception of a small amount of sulphites being bottled. 6 months in terracotta anchor and 2 months in bottle.

Three Senses
It is undeniable that amphora mellows wines. Used on a varietal like Aleatico that gentle it is in its own right it produces a wine like Rosso Arcaico, scents of apricot, incense, wax. The wine manages to travel throughout the mouth posing as an unimpactful liquid fluid. It envelops but does not abstract; it is appropriately warm. The real richness is the menthol notes that come between nose and mouth.

Occhipinti Andrea

Andrea Occhipinti, a roman, attends the Agritourism Institute in Viterbo, and during the studies he discovers the surrounding area that fascinates him so much that he can transplant his wine project here. It is firmly convinced that only native vines, Grachetto and Aleatico, should be worked in these lands. The aim is to preserve and enhance these two vineyards and to express their territorial aspect in the most natural way. The vineyards stretch for just four hectares on the banks of Lake Gradoli, in a volcanic soil, at an altitude of 400 m. A perfect environment for exposure and ventilation. Andrea vinifies with little work in the cellar, uses cement, steel or amphora, practices cultivation with techniques that approach biological management and strongly believes in what he does.
