Cremant Du Jura Domaine de La Renardiere
All Chardonnay grown on Jura marls, vinified on indigenous yeasts without added sulfites. At the manual harvest there is a soft pressing, a static decantation for 24 hours and a fermentation in steel and partly in barrique. Large barrels for aging that lasts 12 months. The refermentation takes place in the bottle with a stay on the lees for 16 months. After disgorgement it is filled with the same wine as other bottles.
Domaine Renardiere
Jean Michel Petit returns to Jura after studying with his wife and decides to start this little domaine of just 6.5 hectars starting from the two hectares of vineyard owned by his family. This choice was not casual since Domaine de la Renardiere's vineyards are today on one of the most interesting terroir in the Jura. The marnes that characterizes the vineyards of Jean Michel gives depth and flavor to its wines. Jean Michel has always been involved in the respectful work of the soils and in the use of organic fertilizers. The domaine now works in a rigorous integrate agriculture regime, utilizing some biodynamic preparations. To make white and red wines, they use foudres of 500 liters and barriques of 228 liters of barriques. At the Domaine there are Ploussard, Trousseau, Chardonnay varieties and of course Savagnin.
