Volnay 1er Cru Caillerets Joseph Voillot 2016
The parcel, just 0.14 ha, was replanted in 1984 and therefore took many years to reach the production quality of the other vineyards, all older. Today, after 35 years, Les Cailleret shows the best of the nobility of this place, historically one of the best ever in Volnay (and for Lavalle in 1855 one of the best cuvée cakes in the entire Cote d'Or). The wine is all centered on the mineral notes of hard limestone, almost surfacing. It combines structure (with fine but tight tannins) with extreme nobility and elegance.
Rather elegant, good complexity: nose of berries, spice, stone and delicate earthy notes. Good is also the layering of flavors, in a medium structure: the finish is clean, balanced, really delicious. You can drink it now, but also wait for a few years.
Launched by Jean Baptiste Voillot in the late nineteenth century, the company first goes into the hands of his son Marius and then to his nephew Joseph, who breaks the habit of selling the whole crop to the shopkeepers and begins the first bottling with the brand of Domaine all 'Start 1950s. Her father, Jean-Pierre Charlot, has been at the helm since 1995. Today, he produces seventeen labels from ten hectares of vineyards owned, limiting the work to the essential, according to the rules of the luttè raisonnée. The most important parcels are distributed between Volnay and Pommard: you always get completely true wines, without rasp, they are as faithful to vintage and to the climates. The short maceration, the low percentage of new wood and a programmatic hostility to any form of oenological intervention can sometimes make them appear a little skinny and bony, but the time is on their part and the territorial matrix always leaves to seize in transparency.
