Cumaro's first vintage dates back to the 1985, to witness the corporate vision in times not suspicious. The destemmed and lightly crushed grapes are fermented at 27-29 ° C in steel fermentation tanks for 12-14 days on indigenous yeasts. Then the wine goes to the malolactic fermentation phase, at the end of which it is aged in 225 liter oak barrels. for a period of 12-14 months. After bottling, Cùmaro refines further, in a controlled environment, for about 6-8 months.
