First selection of dried grapes in the box for about two months. Crushing-destemming, vinification with délestage method and alcoholic fermentation followed by malolactic fermentation for 15 days in vertical steel vats. Aging of 2 years in tonneaux and barriques by Allier and assembling for the last year of aging in 20 hectoliters Allier oak barrels. A year of aging in bottle before marketing.
Its color is a deep ruby red. Its aromas are intense and complex. The warmth of the jammy fruit, cherry and plum in particular, emerges. Elegant sensation of refinements with a nice component of sweet cocoa and rhubarb mixed with very pure licorice. The spice is very typical with warm and intense black pepper. Definitely mineral. The palate is strong expression of the soil of origin. Very savory with a nice freshness dictated by the altitude of the vineyard and the strong active marl limestone. Broad, enveloping with clean tannin and endowed with great ageing capacity. The fruit is dense and sweet of jammy cherry. The finish is long and pleasant. Lovely aftertaste with a distinct sensation of sweet black cherry. Important, well-cooked meats with a particular presence of spices and herbs. Game birds and feathered game. Very aged and cow's milk cheeses in particular. Also intriguing with slightly dark chocolate.
Graziano Pra
Graziano Prà has been following the company since the early eighties, even though his grandfather's destiny is marked by his grandfather and his father.
It has elevated to international fame territories such as Monte Grande and Monte Bisson in Soave and Morandina in Valpolicella; valuable small crus placed on areas with a very high wine-growing vocation. Essentiality and respect for the earth are the principles that base its history. Purity is a key word for the wines of Graziano. Still at the head of the oenological choices, in the cellar it prefers the exaltation of the fruit and all the research and innovation is based on the enhancement of the high quality of the grapes that come from the field. Its productive choice of using only native vines, which has accompanied it since its inception denotes the strong credo of Graziano in the qualitative potential of the autochthonous grapes and the enhancement of the territory.
