Climate The spring temperatures and the excellent water availability favored the good sprouting of all varieties, even slightly in advance of the average, followed by optimal flowering and planting conditions. The rainfall that characterized the first part of the summer period allowed the plants to maintain a good vegetative balance even in the warm months of August, guaranteeing complete Veraison ; In addition to that, the day-to-night thermal differential and good water availability allowed the grapes to mature gradually reaching the time of Harvest which began on the second half of August, healthy and well-turgid. Vinification The grapes come from 15/20 year old vineyards located in the surrounding terrain of the Castle of the Hall, at an altitude between 200 and 400 meters s.l.m., of Pliocene origin, rich in marine fossils with some clay infiltrations. The grapes harvested during the night were transferred to a refrigerated conveyor to ensure low temperature at the time of pressing and de-stemmed. Varieties were vinified separately because they mature at different times and also need a different approach; Chardonnay have been in contact with their peels from 8 to 12 hours at a temperature of about 10 ° C. After this phase, the must was transferred to new barrels of 225 l. Of French oak (Alliers & Tronçais) where alcoholic fermentation took place for about 14 days. The wine remained on its lees in barriques for about 6 months, during which it completed malolactic fermentation. It was then assembled and bottled. It was followed by a period of refinement in the bottle of another 10 months in the historical cellars of the Castello della Sala, before the bottles were introduced to the market. Three Senses
The wine, straw yellow in colour with some greenish reflections, expresses an intense bouquet of aromatic notes of citrus fruits, pears and acacia flowers that blend together with hints of vanilla to increase its complexity. It has a full and well-structured taste, almost salty with sweet notes of hazelnut butter and at the same time persistent, fine and mineral. It is destined to evolve and age very well.
