Corniolo Rosso Conero Vigna della Cava 2022
Montepulciano grapes for red wine vinification are selected from the same vineyard where Flò is produced from then hand-picked when fully ripe in 30 Kg cases. Within few hours, the grapes are destemmed and transferred in a steel tank to ferment with the second press juice of rosé. The grape must is fermented with the grapes for almost 7 days, then the liquid is separated from the skins and fermented at low temperature to maintain the softness and smoothness of a young wine. Following this process, the malolactic fermentation begins, giving to the wine its peculiar aromatic complexity. Aged on lees through the winter, the wine is bottled in March.

Founded in 2015, the company Vigna della cava is located in the municipality of Offagna (Ancona), is specialized in the production of quality wines coming exclusively from the Montepulciano vine. Organic management of the vineyards and the use of innovative winemaking techniques, but not invasive, they allow to obtain elegant wines that express the intrinsic characteristics of the terroir. From this union between innovation and tradition born Flò, rosato and the Corniolo, Rosso Conero.
