For the composition of Franciacorta Pas Dose Cavalleri, the bases from vineyards of at least 30 years, with south-east exposure were chosen. The 2018 season certainly started uphill, with a severe late frost in mid-April. Production was greatly reduced, but the favorable climatic conditions of the summer allowed for optimal ripening, with a profile
fresh aromatic and important acidity, accompanied by an unusual concentration, due to low production.
The result is a Pas Dosé of solid structure and extreme elegance, to demonstrate once again that in the difficulties, which are often part of the campaign work, it is possible to find space for unexpected opportunities.
This Franciacorta is made from 100% Chardonnay grapes from the 2017 harvest. Fermentation and aging take place in steel for 85%, in large oak barrels for 10% and in barrique for the remaining 5%.
Aging on the lees for a minimum of 42 months testifies to the quality of Cavalleri. The manual remuage lasts 4 weeks while the degorgement is done from September to March.

The Cavalleri family has lived in harmony with the land since 1450. Over five centuries, a deep empathy with the vineyard has developed: each generation is confronted day after day with the unpredictability of climate and natural events. Today with Francesco and Diletta at the head of the company, yesterday their mothers Maria and Giulia, and before them their grandfather Giovanni. Today as yesterday with only one objective: to produce wines that faithfully express the essence of the Erbusco hills. Each wine is the child of the previous one, with its own peculiarities that make it unique. 40 hectares of vineyards in the Erbusco hills from which around 200 thousand are produced in the best vintages. Many of Steiner's revolutionary and seductive theories have won them over, but the practical applications of biodynamics even more so. The significance of soil vitality conceived as a living organism. The role of humus and, if necessary, the ability to produce it, so that the resulting balanced system preserves and promotes all the virtuous and vital factors of the soil and environment. Cavalleri has always promoted the benefits of long ageing on the lees. The bottles are turned by hand one by one in the cellar, leaving an indelible artisanal imprint on all the wines.
