Tiepido Plessi 2014
Tiepido Plessi is a pure Lambrusco Grasparossa. The grapes are de-stemmed and pigiatasubisce a maceration between 2 and 3 days Once the steel fermentation ends up. In spring, the must of the same grape previously frozen is added to the wine.

Claudio Plessi's farm is located in the province of Modena in the municipality of Castelnuovo Rangone.
Always focused on a sustainable and respectful style of agriculture, the conversion path to organic began in 1986 and was later certified in 1993.
Claudio Plessi's goal is to, through studies of the land and agricultural heritage, recover and process ancient and almost disappeared native varieties, producing single-varietal wines.
The farm soils are rich in limestone and, given the presence of the Rio dei Gamberi and Torrente Tiepido rivers, can be considered alluvial.
The area is often affected by spring frosts, so the productive vine belt is concentrated at the top. Usually there are no problems related to oidium but, rather, damages related to peronospera are considerable.
