Colle Bianco is a wine composed of 100% Verdicchio. The vineyard from which the grapes come is located in San Paolo di Jesi, at an altitude of 180 meters above sea level and with a northern exposure. The soil is characterized by its clay composition with an abundance of limestone.

Manual harvesting is carried out in early September. Vinification consists of soft pressing of the grapes, followed then by fermentation conducted by indigenous yeasts only.

Fermentation and subsequent aging for 6 months are conducted in steel tanks

As in the most beautiful fairy tales, the Edoardo Dottori company was born from a dream: that of returning to its origins and living by cultivating the splendid hills among which it was born. The land he cultivates is located in the heart of the Marche, in the area traditionally suited to the production of a great wine, Verdicchio dei Castelli di Jesi.

On the estate, the verdant vine is combined with the olive tree with silver foliage, alternating according to the millenary rhythm of Mediterranean countries. In converting to organic farming, Edoardo Dottori works while respecting the biodiversity of the wonderful Marche landscapes, which never cease to enchant anyone who knows how to find the time to stop and look at them. It is precisely they who every day instill a new stimulus for the most beautiful profession in the world: that of the winemaker.
