Nervi Gattinara comes from the best bunches of Casacce and Garavoglie grapes, but also from the Molsino and Valferana grapes. The bunches are delicately destemmed and crushed. Maceration lasts at least 20 days and takes place in temperature-controlled steel tanks and conical vats.
