Extrabrut by name, but pas dosè in fact this excellent cremant is made up of 45/60% Pinot auxerrois, 30% Pinot gris (mostly from Grand cru vineyards !!), and 10/25% of Riesling, with the latter variety in variable and increasing percentage in hot and avar years in terms of acidity. Vinification is carried out with ambitious methods on the basis of the best champagnes: fermentation starts in old barriques (third / fifth passage) and continues in the bottle with a permanence on the lees ranging from 24 to 36 months. Millesimato, not dosed and rarely subjected to malolactic fermentation. We are very far from the widespread and recurring idea of "battle" crémant .....
Rieffel
Converted to the organic regime starting from 2009/2012 and now firmly anchored to the dictates of biodynamic Lucas Rieffel over the years has taken on many risks, preferring to renew his vineyards with mass selections of the best and oldest shoots rather than commissioning them to a nurseryman as more usual .... And this in the firm belief that the only way is to "obtain pure and highly concentrated wines capable of reflecting the multiple facets of Barr 's terroir". Plant density between 6500 and 8500 vines per hectare. A mix of clays, marl, granite and limestone combined with a saline trace borrowed from the ancient seas are the geological substratum of that minimalist approach in the vineyard and in the cellar aimed at a result in the expressive and identity chalice never demonstrating and striking drinkability . In Lucas wines, all obtained from spontaneous fermentations and with no sulphitation during the vinification phase, there is no trace of "that traditional and old Alsace" which too often has bent the peculiarities of the terroir to instances of marked aromaticity, fruity intensity or even sugary residues with a vaguely infantile conception.
