Bourgogne Aligote 'by Sylvain Pataille collects in an ancestral essence of this grape variety. The grapes are grown on calcareous clay soils, and after manual harvesting they are pressed in vertical presses. The must is placed in barrels without being peeled and fermented without adding SO2. It then follows an aging in steel and barrique for about a year.

Three Senses
Sylvain Pataille's Bourgogne Aligotè has lovely floral notes on the nose, without losing its characteristic sharpness of quince and pears. It is an intense wine of high acidity, with plenty of well-defined power starting with pink grapefruit juice and a hint of ginger. Perfect on boiled fish with Jerusalem artichoke sauce.
