Bourgogne Red by Sylvain Pataille comes from grapes grown on calcareous clay soil. When the grapes enter the cellar they are placed in containers for intrapellic fermentation or whole bunch. Maceration takes place for two to three weeks. This activates a process well loved by the winemakers who take little action in the cellar and above all that I work without sulfur dioxide. Vinification takes place in steel and vetresina containers. Then the wine is placed in barriques for aging for more than 2 years.
Bourgogne Rouge has a bright red-purple color. An unmistakable cherry style that formalizes entry-level Burgundies. Savoriness wins out over tannin that gracefully creates volume in the mouth. Woodcock innards pate.
