The Reserve Blend of Pinot Noir (60%) and Chardonnay (40%) grapes from Premier Cru vineyards in Mutigny and Mareuil-sur-Ay. Basic cuvèe composed of 40% of wine from the last harvest, with grapes vinified in steel, and the addition of 60% of Vin de Reserve (usually from the three previous years) aged in small used wood. Malolactic fermentation fully carried out, with a stop on the lees for 36 months. Final dosage of about 8 gr./litre.

The Dauby Style tells of sustainable agriculture in organic conversion. Eight hectares in production, mainly Pinot Noir but with the valid contribution of chardonnay, distributed between Ay and the neighboring Villages Premier Cru of Mutigny and Mareuil-sur-Ay.
The Dauby Champagnes, full and rich, follow the opulence of Ay and the neighboring villages, where the chalk of the subsoil merges with more superficial veins of clay. A reading marked by the voice of a powerful but at the same time "round" pinot noir, which leaves chardonnay, often shoulder-length in the cuvées, the task of giving finesse and elegance. A skilful mix that the young Flore left to the Maison.

Three Senses

The basic product (only in the name) of the Dauby range traces the generous and round style of the grapes that are the daughters of the "terroir" of Ay and the surrounding municipalities. Noticeable the prevalence of Pinot Noir, it has a prominent structure and a bewitching drink. Excellent as an aperitif glass, to accompany savory snacks of all kinds.
