Patrick Desplats

In 2001, Patrick Desplats began his wine career, opening the Domaine des Girotte with Sebastien Dervieux. Today, they also run their own cellars besides the Domaine des Griottes. And Patrick, a talented vintner, cultivates his Domaine in organic agriculture, with the use of animal-plow. The wine is placed in vertical presses that respect the integrity of the grapes and vinification is completely natural. No sulfur is added and the wines are stored on the lees for several years. Patrick Desplats cultivates its vineyards on soils mostly composed of scists in an environment still surrounded by vegetation, fruit trees and animal species.
