Verdicchio Kochlos Edoardo Dottori 2022
Kochlos in Greek means shell, like those that enrich the Verdicchio soil from which these grapes come with minerals. The soil is mainly composed of clay, silt and sand in equal proportions, rich in limestone and skeleton, it was a seabed. The vineyard is managed with the principles of organic farming, green manure and mature manure are used as fertilizers, and the soil is managed through grassing and cover crops. Fermentation is entrusted to indigenous yeasts at a controlled temperature. The wine then ages in cement for 12 months and in the bottle for another 12. The 2018 is the first vintage produced and a definitely recommended tasting.

As in the most beautiful fairy tales, the Edoardo Dottori company was born from a dream: that of returning to its origins and living by cultivating the splendid hills among which it was born. The land he cultivates is located in the heart of the Marche, in the area traditionally suited to the production of a great wine, Verdicchio dei Castelli di Jesi.
On the estate, the verdant vine is combined with the olive tree with silver foliage, alternating according to the millenary rhythm of Mediterranean countries. In converting to organic farming, Edoardo Dottori works while respecting the biodiversity of the wonderful Marche landscapes, which never cease to enchant anyone who knows how to find the time to stop and look at them. It is precisely they who every day instill a new stimulus for the most beautiful profession in the world: that of the winemaker.
