A TRADITIONAL SWEET - SLOW FOOD PRESIDIUM
This preparation has only the name of the loin. Once upon a time in the Marche countryside figs were grown in large quantities and abundance and the farmers worked hard to preserve them. One of the methods was this salami prepared with figs dried in the sun, ground, mixed with anise, almonds and chopped walnuts, wrapped in fig leaves and tied with woolen thread.
