The Bourgogne Blanc of the Santini Collective was first prepared before the acquisition of a plot on its clay soil in the municipality of Uchizy, in the Maconnais.

It is an unusual wine, my personality, charm, interest and pure goodness, like all Santini wines. The wine is vinified on its own, ends up working in the bottle. Batonnage when is strictly necessary.

All the wines produced by Christophe are vinified with indigenous yeasts and have no added sulfur until bottling. No other additives or manipulations are used at any time and the wines are bottled unfiltered. Up to now the vinification on the reds has been done entirely using whole cluster fermentations with the aim of always being wines guided by the terroir, light but aromatic, fruity. Chris prefers infusion techniques over extraction techniques, avoiding aggressive pumping and heating during winemaking. Whites and reds are aged in a combination of old fiberglass barrels and tanks.

Santini's Bourgogne Blanc is a wine that releases salty and savory elements well assembled with the acidic parts trafsormed in memories of lemon juice. So an acidic and refreshing wine with a succulent texture. An excellent aperitif wine, but also to accompany white meat dishes with a creamy sauce on the side.

Chris Santini is of French and American descent. Spending every summer in France as a child, he decided to work his first crop in Provence at the age of 20. He fell in love and after finishing his oenology studies at the University of Beaune he spent years working throughout Burgundy for both large and small Domaine. He starts working for legendary importer Kermit Lynch first in New York and then in his office in Beaune.

After years of traveling and tasting with Kermit all over France, he felt like starting wine making again and released his first commercial vintage from his friend Christophe Pacalet's cellar in 2013. He has since moved to his space in Auxey- Duresses, by purchasing all the material on Bon-Coin

The goal is to produce "vins de soif", a wine made to quench your thirst and to be consumed with fervor. The fruit comes from interesting and unique Terroirs that are off the beaten track in Burgundy, Beaujolais and elsewhere.

In 2016 he opens the doors of his cellar for other young enthusiasts, who elaborate a barrique or two of their own wines, using the available material. He baptized this project as Auxey-Collective which also includes Jon Purcelle, former De Monteille tractor driver, with the name Vin Noè.
