Metodo Classico Brut Rose Mattia Vezzola Costaripa
A Brescian rosé from the morainic hills of Lake Garda, thanks to the skilful hand of Mattia Vezzola. 80% Chardonnay and 20% Pinot Noir harvested by hand from the vineyards facing south, south-west. The subsoil of glacial origin, gravelly morainic with the presence of limestone and clay, accompanies the growth of the old vines of over 25 years of age.
The hand-picked grapes in the early hours of dawn are subjected to slow and soft pressing. The first fermentation takes place at a controlled temperature with 35% of the must evolving in small white oak barrels for about 8 months. Second fermentation in the bottle with aging of 30-36 months from the harvest.
Light pink, delicate and soft, enlivened by a luminous and fine effervescence. On the nose the small red fruits of pinot noir, wild, currant and raspberry, cooled by a note of citrus peel. Essential and elegant, it also takes on a fleshy and savory harmony on the palate. Ideal companion for seafood aperitifs, oysters, sushi or delicately smoked salmon fillet.
