Profumo di Vulcano was born in a small vineyard dating back to the late nineteenth century, about half a hectare of land on the northern slopes of Etna at 600 meters above sea level, in Contrada Feudo di Mezzo, a hamlet of Passopisciaro, in the municipality of Castiglione di Sicilia. .
The altitude and the north-facing position offer shelter from strong sirocco winds, causing a daily summer temperature range of about 28 ° C: these particular conditions guarantee the grapes a longer ripening, which enriches the taste and the complexity.
The plants, some prefillossera and with an average age of 100 years, represent the best native Etnean species - Nerello Mascalese and Cappuccio, Alicante and Francisi - combined with about forty white grape plants present in the vineyard. A vineyard-garden that is the perfect expressive synthesis of its territory.
Spontaneous fermentation in open vats, without temperature control and with indigenous yeasts, aging in first and second passage tonneaux for 24 months, 6 months in bottle.
