From the Côte Chalonaise, just outside Mercurey, on a white limestone soil there is the Laisse Tombere Pinot Noir vineyard, the first vintage produced this 2023

100% whole bunch vinification, fermentation with indigenous yeast for 3 weeks and carbonic maceration in the tank, minimal extraction by wetting the cap with buckets, pressing with the feet towards the end of fermentation, aging for 10-12 months in 228 used and/or barrels of 350 L, assembled in tanks for 1 month, without fining, without filtration, only SO2 added before bottling.

Bastian Wolber talks about himself in a few words, but you manage to make his peaceful soul feel immediately. In the Jura he got there by chance, to work at Ganevat out of determination. Alongside one of his gurus, he grew up in a style all his own, albeit in line with that of the Jura. Due to an accident during the vinification that compromised his stay at Jean Francois, Bastian Wolber returned to Baden and with the free time available he was finally able to look for and finally buy grapes. In fact, the research was immediately a success and Bastian himself was surprised by the so much generosity received. Thus were born the first labels of a project that tells of Mondeuse della Savoia grown on Mont Granier, of mixed plots of Jean Marc Dreyer in Alsace, of pinot noir from an old vineyard on limestone in Baden. But Bastian Wolber is a young, curious winemaker who throws himself into challenges, such as joining the Santini Collective or making micro plots with Jean-Yves Bizot. A winemaker with the courage to create new things.
