100% pinot noir, this rosé comes from clayey clay soils of the upper Jurassic, located between the Vallée de la Vallée de l'Arce and the Vallée de la Seine, in the Côte des Bar.
An assembly Rosé of two cuvées: "Chervey" (70%)

This Cuvée decanted naturally after vinification in wooden barrels and without malolactic blocking, fermenting with indigenous yeasts.
Subsequent 9 months refinement on the lees, then rest for 2 months in the cuve.

«De - Quoi - Te - Mèles - tu» (20%) This more complex cuvée underwent a maceration of three weeks in whole bunches, without sulphites. Vinification in barrels without malolactic block. Subsequent aging of 9 months on the lees, and then rest for 2 months in the cuve.

The remaining 10% is covered by the so-composed Vin de Réserve 2011 (80%) 2010 (20%) which aged for 3 years in cask.

A week before the draft, the cuvée is combined with the rectified Concentrated Must. The wines are disgorged without dosage and without SO2

Three Senses
Wonderful nose of ripe fruit, quince, figs and dried grapes. Smoky notes of toasted almonds and maple syrup further characterize this splendid champagne. The palate is creamy and accompanied by an exacting mousse grip, the minerality is pure power. A gastronomic champagne, with real gourmand sensations.

Charles Dufour

Charles Dufour

The Dufour family has been established in the Aube since 1925. This area of the champagne region far from the big cru and almost attached to the Chablis region is becoming a true point of reference for champagne de Vigneron. Here comes the most opulent, rich, joyful and fruity Champagne ... the bubbles that awaken today the most bored palates.

Charles Dufour transforms the traditional farming of the Domaine, passing definitively to a biocertificated agriculture in 2010. Its stainless choices are: no enrichment of musts, alcoholic fermentations with only native yeasts, no filtration or clarification of sparkling bases. Refinement made in wood and fine lees, in a spirit of respect for wine, and with the desire to ease its breath. The sulfur dioxide is also banned from the boiling phase, after which no dispensation with liqueur d'expédition occurs.

Champagne Bulles de Comptoir is refined in bourguigon pieces and no additions of sulfur to bottling
