Champagne Brut Millesimato 1er Cru Dauby 2014
Small houses like Dauby are not used to making Millesimati every year. When this happens it is for the asouta quality of the vintage wine, and is produced in a few hundred bottles.
The Millesimato di Dauby is the result of the Grand Cru of Ay and Premier Cru of Mutigny vineyards. Pinot noir for 75% and Chardonnay for 25%, first pressing, malolactic fermentation and processing in steel. Matures 5 years on the lees. Dosage of about 7 gr / liter.
The Dauby Style tells of sustainable agriculture in organic conversion. Eight hectares in production, mainly Pinot Noir but with the valid contribution of chardonnay, distributed between Ay and the neighboring Villages Premier Cru of Mutigny and Mareuil-sur-Ay.
The Dauby Champagnes, full and rich, follow the opulence of Ay and the neighboring villages, where the chalk of the subsoil merges with more superficial veins of clay. A reading marked by the voice of a powerful but at the same time "round" pinot noir, which leaves chardonnay, often shoulder-length in the cuvées, the task of giving finesse and elegance. A skilful mix that the young Flore left to the Maison.
It plays delicate and fine on a substance of great thickness. Floral with hints of fruit pulp and pastry, it hints at an iodized saltiness. Pleasant and elegant, to be tried with marine cruditè and lobster.
