Champagne Blanc de Blancs Sophos Waris Hubert
Sophos is a version of Extra Brut Champagne (with a sugar dosage of 4 g/l) from 100% Chardonnay grapes. The region of origin is the Cote de Blancs, which is characterized by the production of excellent Blanc de Blancs.
It is the case of Sophos, whose Grand cru of origin is Avize and, in particular, grapes are harvested in a parcel or, rather, in a lieu-dit that is "Les Maladries".
"Sophos" comes from the Greek and means "wise, knowledgeable," and the name already hints at the greatness of this Champagne. Greatness accentuated, no doubt, by its provenance from soils rich in limestone and the age of the vines, which are around 90 years old.
Vinification involves alcoholic fermentation in barrels followed by partial malolactic fermentation. The use of cold is constant throughout the winemaking process. The long aging of 6 years also takes place at a constant temperature of 11°C.
Sophos is a Blanc de Blancs of great body, structure and maturity. The typically chalky soil of the Cote de Blancs means that even in the glass the presence of a mineral side is well defined and harmonious.

The Waris-Hubert family has been producing Champagne for four generations in Avize, one of the Grand Crus of the Côte des Blancs.
Today, Olivier and his wife Stéphanie, control the production of 11 hectares of vineyards divided among the most representative Grand Cru and Premier Cru of the Champagne region (Avize, Cramant, Chouilly, Oger, Grauves, Ay...).
Their work aims to perfectly reflect the terroir from which the grapes come. To do this, they work by separating all the parcels on arrival at the winery and at pressing in order to obtain Champagnes with well-defined characteristics that reflect their provenance.
