Chianti Classico from Cigliano di Sopra is made from Sangiovese grapes from vineyards located at an altitude of about 250 meters above sea level. The soil in which they are planted is characterized by a sandy composition, with a presence also of silt and clay, rich in rocks and limestone. Soil conformation that is defined as alluvial that allows the vines to be protected from water stress even in the driest years.

The best grapes are selected and, after gentle destemming, are placed in steel tanks where they undergo fermentation with only indigenous yeasts. In fermentation, especially on the days of greatest yeast activity, pumping over, which may be two/three per day, is essential.
At the end of fermentation grapes are pressed and the mass is transferred to barriques and tonneaux where they also undergo malolactic fermentation. Maturation lasts for 14 months and attempts are made to maintain contact with the fine lees that enrich the wine. A final short period of aging takes place in steel.

Cigliano di Sopra

The history of Fattoria Cigliano di Sopra begins way back in 1300 with the Bardi family.

From generation to generation, then, the important complex of the Fattoria di Cigliano di Sopra farm comes down to the present day in which the family of Maddalena Fucile, current winemaker together with Matteo Vaccari, manages the farm and the adjoining agriturismo.

The Cigliano di Sopra farm is located in the heart of the Chianti Classico production area, and more precisely in San Casciano in Val di Pesa. Of the 32 hectares, 8 are dedicated to viticulture, 17 hectares are dedicated instead to olive groves and the remaining 7 are occupied by parks and woods. The alluvial nature of the soil, given the proximity of several streams and rivers, allows the vines to be protected from excessive water stress even in the driest years.

A young, close-knit team works to create wines that are new and innovative but maintain the characteristics that make Chianti Classico important.
