From a blend of Sémillon (25%), Loin de l'Oeil (25%), Mauzac (25%) and Grenache (25%), harvested from clay-limestone and loamy soils.

After manual harvesting, spontaneous fermentation is conducted exclusively by indigenous yeasts. This fermentation is stopped when a sugar content of 17 g/l is reached. After bottling, re-fermentation for frothing resumes spontaneously thanks to the residual sugar present. Finally, no further additions are made at the time of disgorging.
