The chardonnay grapes for this wine were crushed in Beaune, without adding SO2. Subsequently, the must was transferred to Dijon, to Marc's cellar where all the other fermentations also take place. The vinification takes place with natural yeasts, while the refinement is divided between new and old barrels. Marc often experiments with different types of wood such as chestnut and acacia. Minimum amount of SO2 added at bottling, minimal use during fermentation and elevage depending on the vintage.
