Gin Tumultus
Tumultus gin was created in collaboration with chef Stefano Castricini and his passion for food fermentation. it is the first gin in the world that is produced by lactofermentation of juniper berries.
Lactic fermentation takes place in saline solution and is able to give the 'food good flavor, good digestibility and a longer shelf life. It is a method used purely for food preservation, usually applied to vegetables because of the short shelf life once harvested.
For Tumultus, fermentation is provided for juniper berries only, which are transformed in their organoleptic structure while retaining the main flavor and aroma of Juniper. Once fermentation is complete, they are infused with grain alcohol allowing all the properties to be extracted, and then the classic distillation of the alcohol alone takes place.
The end result is a gin that defies expectations and satisfies the most discerning palates. The lacto-fermentation of juniper creates a new range of aromas, while still being traceable to it, giving our gin a distinctive character, with a rich flavor profile and a perception of savoriness that surprises the palate in every sip.
Scriptorium
Scriptorium - Corridonia - Macerata
A place of silence and dedication, which we could call the treasure chest that preserved knowledge in past centuries, located in monasteries generally communicating with the library. In this room, lit by skylights, the amanuensis, mostly monks, were busy copying manuscripts. In the other rooms of the monasteries, the monks occupied their time studying and researching plants and herbs, refining their distillation techniques to produce aromatic liqueurs prized throughout Europe.
"My experience behind the counter is now decades. Curiosity and the desire to do things have also led me to work outside the Marche region, in environments where I have been able to delve into the world of mixing and distillates. In particular, I have always been fascinated by those distillates that represent a place, a history, a legend. This is in fact what I wanted to bring back into Scriptorium Gin: Le Marche, my homeland.'
