Sherry Fino El Maestro Sierra
Dry wine made from 100% Palomino grapes. After the end of fermentation, the wine is fortified to an alcohol content of 15° and begins its aging in barrels. The special environmental conditions and the right gradation favor the growth, on the surface of the wine, of the famous Velo de Flor. A veil formed by microorganisms, especially yeasts, which protect the wine itself from oxidation and at the same time enrich it.
The aging in American oak barrels is extended for four years and the traditional system of “Criaderas y Soleras” is adopted.

These are the words that Maria del Carmen Borrego Plá uses to describe the relationship that the people of Jerez have with wine, and with Sherry in particular. Maria del Carmen is an enologist and scientist, a tireless popularizer of Sherry culture and, to this day, the head of Jerez de la Frontera's historic winery, El Maestro Sierra, founded in 1830. Before her, it was her mother Doña Pilar Plá Pechovierto who held the corporate reins.
El Maestro Sierra produces Sherry of all types, both sweet and dry, from both Palomino and Pedro Ximénez grapes.
