Sherry Amontillado 12 Years El Maestro Sierra
Dry wine from 100% Palomino grapes. A unique wine resulting from the fusion of two types of aging, always within the traditional system of Soleras and Criaderas.
The initial phase of its aging takes place under the veil of flor. A veil formed by microorganisms, mainly yeasts, which protect the wine itself from oxidation and at the same time enrich it. During the first six years of its life, the wine remains in criaderas where it acquires pungent notes and accentuates its dry palate. The wine is then fortified to an alcohol content of 17º and the flor weakens to begin the second phase of the aging process: the oxidative phase in contact with oxygen.
Bodegas El Maestro Sierra - Jerez de la Frontera
“...wine for this land is a sign of identity, present in literature, history, religion, festivals and the deepest feelings of our people...”
These are the words that Maria del Carmen Borrego Plá uses to describe the relationship that the people of Jerez have with wine, and with Sherry in particular. Maria del Carmen is an enologist and scientist, a tireless popularizer of Sherry culture and, to this day, the head of Jerez de la Frontera's historic winery, El Maestro Sierra, founded in 1830. Before her, it was her mother Doña Pilar Plá Pechovierto who held the corporate reins.
El Maestro Sierra produces Sherry of all types, both sweet and dry, from both Palomino and Pedro Ximénez grapes.
