Sherry Oloroso 15 Anni El Maestro Sierra
A dry wine that, after the end of fermentation, is fortified to an alcohol content of 18°, which does not allow the siluppo of Velo de Flor. This involves subsequent oxidative aging, that is, in contact with oxygen. The slow action of oxygen on the wine causes it to become more concentrated and increase in aromatic complexity.

These are the words that Maria del Carmen Borrego Plá uses to describe the relationship that the people of Jerez have with wine, and with Sherry in particular. Maria del Carmen is an enologist and scientist, a tireless popularizer of Sherry culture and, to this day, the head of Jerez de la Frontera's historic winery, El Maestro Sierra, founded in 1830. Before her, it was her mother Doña Pilar Plá Pechovierto who held the corporate reins.
El Maestro Sierra produces Sherry of all types, both sweet and dry, from both Palomino and Pedro Ximénez grapes.
