This Crozes-Hermitage comes from Syrah grapes grown in the proprietary vineyards located in the municipality of the same name and managed biodynamically. In the cellar the bunches are 90% destemmed, the remaining undestemmed part will favor spontaneous fermentation without selected yeasts; the macerations last 20 days and the refinement is carried out in 500 liter barrels for 12 months with an evolution capacity of many years. This label differs precisely because it is released on the market the spring following the harvest. The vineyard in this case comes from the heaviest soils of the domaine, therefore the legendary Dard and Ribo want to interpret it with a fruity style and a round body. The maceration is short, the refinement takes place in wooden barrels and the alcohol content tends to be rather low.
The impenetrable inky black colour anticipates a nose full of red fruit, cherry, but also cola, tobacco, leather and floral notes. The palate is a swing of freshness and fruit explosion with a surprisingly dry finish.
Dard & Ribo
A great duo the one of Jean Rene Dard and Francois Ribo formed in the early eighties. The two colleagues started with a small plot of land of just one hectare in the village of Mercurol. It started right away with today's ideas but very avant-garde times. In 1984 their first vintage came out and already from that vintage fermentations are spontaneous, sulfur dioxide almost totally absent, there is no temperature control and only copper and sulfur are used in the vineyard. Basically a single goal that is stubbornly pursued today with the same principles: to enhance the terroir with easy-drinking wines, because wine must be drunk.
