Riesling Graacher Himmelreich Kabinett Willy Schaefer 2023

The classic crystal clarity of Schaefer wines is even more amplified by the vintage, with the perfect, undamaged grapes harvested. A very demanding job, right from the pre-selection in the vineyard to safeguard the most beautiful grapes, which developed a golden yellow colour, for a long harvest that lasted until mid-October. The Schaefers are indeed very radical in their choices, reducing the yields of each type far beyond what is done by other quality producers, without ‘forcing the vintage’. It is now standard practice to taste the grapes from each vineyard before the harvest until the Schaefers all agree that they have reached maturity. The tastings also continue in the cellar to monitor that the balance between sweetness, acidity and persistence is always well balanced. Notes of exotic fruit, fresh herbs, white flowers, in essence a wine to fall in love with. For pairing, we recommend it on its own as a medicine, but if you want to accompany something then a blue cheese or foie gras will be perfect together.
