The climate of Les Gaudrettes is mainly characterized by a soil of marly composition. In the plot Fabrice Dodane has Pinot Noir grapes, all of which flow into this cuvée. Traditionally vinified in large oak barrels and with no SO2 added at any time. This is Arbois in its purest form.

Three Senses
Floral and spicy aromas, combined with red cherry, grapefruit peel, blueberry and spices. The palate is silky, with beautiful fruits and spices, with an earthy and mineral touch. There is also a note of saltiness, which suggests olive. Dense and structured, it is a very gastronomic Pinot.

Domaine de Saint Pierre

After studying oenology in Beaune and working for several years at the Pupillin cooperative, Fabrice Dodane began working as a winemaker at the Domaine de Saint-Pierre in 1989. After the untimely death of the former owner, he acquired the domaine in 2011. Fabrice Dodane adopts organic farming and produces his wines in the most natural way possible, with native yeasts and the use of neutral tanks or barrels. In addition to the Domaine de Saint-Pierre, he has broadened his horizons with the Les Dos d'Chat project, created with winemakers from the Jura and other regions, with biodynamic grapes. Known for his pragmatism and charisma, Fabrice Dodane produces precise and authentic wines that express all the purity of the Jura terroir. 

Domaine de Saint-Pierre is located in the Jura region of France based in the small village of Mathenay. His estate covers 6 hectares in the Arbois and Côtes du Jura AOCs, which feature limestone and marly soils.
