Olivia is Bergianti’s wine made from the Lambrusco Oliva variety, a grape that has almost disappeared and is rarely used today. It is harvested last, at the end of the season. Due to its low acidity, it is vinified as a still wine.  The grapes are harvested by hand into 250 kg perforated bins, destemmed separately from the others, and vinified with an overnight maceration. The must is then separated using a soft press. Fermentation occurs spontaneously with indigenous yeasts. The wine is aged for 6 months in stainless steel, followed by 12 months in bottle before release. No fining or filtration is carried out before bottling.

Gianluca Bergianti is a young winemaker, hungry for wine and thirsty for knowledge. In 2008, together with his wife Simona, he founded the Terrevive farm in the hamlet of Gargallo di Carpi, in the province of Modena. He has a clear vision and follows the principles of biodynamics without treating them as dogma. His main goal is the quality of the grapes he brings to the cellar. He judges his own wines and explores those of others. His work is driven by great enthusiasm, and his winery reflects both rationality and aesthetic taste. The wines are an expression of agricultural complexity; they are not the mere result of agronomic or oenological techniques, but the fruit of a living system that enhances their depth and diversity. Lambrusco can only be seen as the ideal companion for traditional Emilian cuisine.
