Champagne Les Galipes de Coulommes Extra Brut Jean Servagnat
"Galipe" is a term that refers to the vine itself. This cuvée is a blend of different parcels from Coulommes-la-Montagne and perfectly reflects the terroir and its grape varieties. The vineyards are planted on predominantly clay and limestone soils.
A blend of Pinot Meunier (around 60%), Chardonnay, and Pinot Noir, this is an Extra Brut Champagne with a sugar dosage of 3.5 g/l.
Jean Servagnat - Coulommes-la-Montagne
Jean Servagnat is based in the Montagne de Reims, specifically in Coulommes-la-Montagne. His approach to viticulture is careful and sustainable. No herbicides or insecticides are used in the vineyard, and in the cellar, the wines are handled as little as possible.
The most widely cultivated variety is Pinot Meunier, a grape well-suited to the cool climate of the Montagne de Reims. Some parcels, however, are dedicated to growing Chardonnay and Pinot Noir. Vinification takes place in both temperature-controlled tanks and wooden barrels, the latter allowing for greater complexity to develop.
